JERK CHICKEN
1/2 cup minced green onions
1/4 cup orange juice
1 tbsp. minced gingerroot
1 tbsp. minced hot pepper
1 tbsp. lime or lemon juice
1 tbsp. soya sauce
1 clove garlic, minced
1 tsp. allspice
1/4 tsp. cinnamon
pinch of ground cloves
2 pounds chicken drumsticks and/or thighs
In shallow glass dish, combine onions, orange juice, ginger, hot
pepper, lime juice, soya sauce, garlic, allspice, cinnamon and
cloves. Add chicken pieces, cover and marinate in fridge,
smurgling occasionally for up to 8 hours. Remove chicken from
marinade and shake off excess marinade.
Barbeque on greased grill at medium setting for 30 minutes or
until juices run clear when pierced with a fork. Turn every 10
minutes and drizzle with marinade during last 15 minutes of
cooking time.
** can also be cooked in oven at 350degrees.
